Omelet with bell peppers

Ingredients:

  • 3 large eggs
  • 1 bell pepper (any color, or a mix for variety)
  • 1/4 cup onion, finely chopped
  • 1/4 cup cheese (optional, cheddar or feta work well)
  • 1 tbsp milk (optional, for fluffier eggs)
  • Salt and pepper, to taste
  • 1 tbsp butter or olive oil
  • Optional toppings: Fresh herbs (parsley, chives), hot sauce, or diced tomatoes

Instructions:

  1. Prepare the Vegetables:

    • Wash and thinly slice the bell pepper into strips or small dice, depending on your preference.
    • Finely chop the onion.
  2. Cook the Vegetables:

    • In a non-stick skillet, heat the butter or olive oil over medium heat.
    • Add the chopped onions and bell peppers, and sauté until they soften, about 4-5 minutes. Stir occasionally to prevent burning. Once cooked, transfer them to a plate and set aside.
